We had an abundance of cucumbers in the garden this year, so we decided to try our version of the classic Greek Tzatziki sauce.  Two 5th graders made the yogurt sauce and served it to the other Cobb kids in the cafeteria.  This was a new flavor combination for most kids, but everyone loved it!

Tzatziki Sauce

  • 1 large cucumber
  • 2 cups plain Greek Yogurt (thick style)
  • 2 Tbsp Chopped fresh dill
  • 1 clove garlic, finely minced
  • 1 tsp lemon zest
  • 1 Tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Pita chips

Start by cutting the cucumber length-wise, and removing the seeds with a spoon.  Using a box-grater, shred the cucumber into small pieces.  Squeeze as much of the liquid out as you can by wrapping the shredded cucumber in a few papers towels and pressing it hard.  Put the cucumber shreds into a bowl and mix in the remaining ingredients.

Tzatziki sauce is great as a dip with pita chips, and delicious served with grilled vegetables and meat.  Truly a summertime treat!
