One of our students insisted we plant turnips! She and her 1st grade friends gently planted the whole pack of seeds in late winter, and by mid-May we had a bumper crop of beautiful, globe turnips. As you might know, turnips can be a little bitter, and tend not to be everyone’s favorite root vegetable. In fact, many adults around here didn’t like them at all! With a little experimenting, we discovered how to make them absolutely delicious.
We found that if you thinly slice the turnips into “chips”, and gently sauté them in coconut oil until they are golden brown, they become sweet and yummy! We also tossed in the greens until they were crispy too. Double “thumbs-up” all around!
